Did you know that 80% of the ingredients used in Food Forum come from Flevoland? There is a lot of cultivation in the area that can be used to make all kinds of tasty things. For example a hummus of soybeans, again grown locally in Flevoland. These beans are high in protein and locally-sourced!
Flevoland is constantly experimenting with growing ‘new’ crops. We are always searching for crops that normally grow outside the Netherlands. Think of soybeans, field beans, quinoa, but also sopropo (a special vegetable common in Suriname). With the right conditions and the fertile soil of Flevoland, farmers here are well on their way to making this possible!
Soybean hummus with fries flat bread
This delicious hummus made from soybeans from Flevoland is a perfect dish to accompany drinks, as a side dish or as a snack. The recipe is for 4 persons.
Ingredients
- 200 grams of soybeans
- 1 onion
- 1 glove of garlic
- 1/2 teaspoon cumin seed powder
- 1/2 teaspoon coriander seed powder
- 2 tablespoon rapeseed oil
- 1 tablespoon apple vinegar
- peper and salt to taste
- 2 flat bread
Preparation
Boil the soybeans for 10 minutes. In the meantime dice the onion and preheat the frying pan to 180 degrees C.
Add the cooked soybeans, onion, garlic, cumin seed, corinader seed, rapeseed oil and apple vinegar to the food precessor and blend into an paste (hummes). Add salt and pepper to taste.
Cut the flatbread into strips. Fry these for a few minutes until golden brown. Sprinkle the strips with salt. Serve alongside the hummus. Enjoy!
